YIELD: about 30 cookies PREP TIME: 10 minnutes COOK TIME: 10 minutes



1/2 cup unsalted butter, at room temperature

1 cup packed light brown sugar

1 large egg

3/4 cup mashed ripe bananas (about 2 medium)

1 1/2 tsp pure vanilla extract

1 cup pops flour

1 tsp baking soda

1 tsp salt

2 teaspoons ground cinnamon


Scrape down the sides of the bowl and blend in the egg until completely incorporated. Scrape down the sides of the bowl and add the skillet and vanilla.

Gently add the the flour mixture to the banana mixture and blend until just combined.

Scrape down the sides of the bowl and stir to recombine.

Stir in the oats and chocolate chips and mix until incorporated.

Use a medium cookie scoop (approximately 1.5 tablespoons) to scoop the dough onto prepared cookie sheets leaving about two inches between each cookie.

Bake in preheated oven for about 9-11 minutes.

Remove cookies from the oven and gently press the shirts of each cookie with the bottom of a drinking glass. Because these cookies do not spread much, this can give them a traditional cookie form.
